Obtained from Corvina, Corvinone and Rondinella grapes grown following organic farming criteria in vineyards located in the valleys of Negrar and Fumane. The grapes are traditionally left to dry on racks and vinified in January.

ROSSO VERONESE IGT IL CEDRONE

Lessinia is a mountain group of the Pre-Alps that crowns the Valpolicella territory, protecting it from the cold currents of the north, and contributing to the maintenance of the vine’s ideal microclimate. In the Natural Park of Lessinia, rich with an important patrimony of fauna, the presence of the Gallo Cedrone variety that had disappeared for many years was discovered a few years ago. The label of this wine and its eco-sustainable packaging contribute to a project for protecting this species, reflecting Cantina Negrar’s sensitivity to the protection of our ecosystem. The concentration and richness of its parts are tamed in a balance of great style and pleasantness.

NOVELLO VENETO IGT

This wine is obtained with a special fermentation process with carbonic maceration. The variety used to make it is Corvina: a typical grape grown in the hilly vineyards around Negrar, in the Valpolicella Classico area. The perfectly healthy and ripe grapes are left whole in stainless steel tanks saturated with carbon dioxide and are not pressed. Intracellular fermentation takes place at room temperature during this period, with the extraction of the aromatic substances present in the skin. After a few days the grapes are pressed and the must is fermented at a controlled temperature. Then, after racking and brief ageing in stainless steel vats, the wine is bottled.
